Eating good while enjoying the outdoors doesn’t have to be difficult. The easiest way to eat good food while camping or enjoying the outdoors is preparing all your ingredients ahead of time. In this article, not only are we going to test out an easy beef and broccoli stir fry recipe, we are also going to cook it in our new cast iron wok from Backcountry Iron, who is a Utah based company.
For us, we like to test out several recipes at home first, to see if they are practical and easily done in an outdoor setting. This beef and broccoli recipe took a little time to prep, however, once the ingredients were ready to go, the cooking time was quick. Now, the following recipe was found online on a website called Just a Taste. We did, however, tweak it a little, and we will share with you a few little tips we found while cooking this recipe in a cast iron wok.
The first step to this recipe is to cut up a flank steak into thin pieces. The recipe calls for 1 pound of flank steak, however, our steak was about 1.34 pounds.
Tip: When slicing your steak, be sure to go against the grain of the meat. This will insure a more tender piece of meat in your stir fry.
Once all of your steak is sliced, place the pieces into a bowl. Whisk together 2 tablespoons of cornstarch and 3 tablespoons of water. Pour over the beef and mix until all pieces are coated.
The next step is to grate up 2 teaspoons of fresh ginger and mince 1 tablespoon of fresh garlic.
In a separate bowl, whisk together 1 tablespoon of cornstarch, 1/2 cup soy sauce, 3 tablespoons of light brown sugar, 2 teaspoons of ginger, and 1 tablespoon of fresh minced garlic. Set the sauce aside.
With all the ingredients ready to go, it’s time to heat up the cast iron wok (Affiliate link). If you don’t have a wok, this recipe can also be made in any non-stick skillet or pan of your choice. Since we are testing out a recipe for outdoor cooking, we used a two burner Camp Chef (Affiliate Link). Once the wok is hot, coat the wok with Olive Oil.
Place the thin strips or flank steak into the wok and cook until the pieces are browned on all sides. Using a set of tongs, remove the steak and set aside.
With the steak removed from the wok, coat the wok with a little butter. Place 4 cups of frozen broccoli into the wok and cook until tender, about 4 minutes. If you choose you can use fresh broccoli.
Tip: If you find your wok or pan getting a little dry, add a little water.
Once the broccoli is tender, return the beef to the wok and blend.
Add the sauce to the mixture. Heat to a boil while stirring the mixture. The sauce will thicken on its own in about 1 minute. Remove from the heat and serve over rice or noodles.
Although we didn’t add onions, the original recipe called for 1/2 cup sliced white onion.
As mentioned above, the prep time of this recipe took some time, however, once the ingredients were prepped and ready to go, cooking was fast and easy. This recipe can easily be cooked in an outdoor setting, whether it be camping, a day at the park, or on your back patio. So far, we have been impressed with the cast iron wok. We are looking forward to using this for many more recipes, as well as using it on our outdoor adventures. This wok can be used directly on your kitchen stove, hot coals, or an outdoor camp stove.
